APSERP is a structure set up by the Andhra Pradesh government which aims to empower aspiring communities and help them overcome their problems through self-managed organisations. As a group of eight we were working with APSERP and aim at designing a restaurant model that can be replicated across Andhra Pradesh. Each member of the group is handling a particular part of the restaurant and I am designing the dining and the waiting lounge of the entire space.
The dining is a space where the customer spends the maximum amount of time and through the different dining, seating and interiors of the place I want them to have an experience of what Andhra is like. Apart from the Andhra food that is served, traditional practices like eating on a banana leaf, sitting on the floor and eating, the materials used for the architecture, the elements used in the interiors all add up to the Andhra experience. Since it is a chain of restaurants modularity and flexibility are the key points that I have incorporated in my design. Creating an experience powerful enough that they would want to come to Inti, as our restaurant is named, again is what I aim for.
As a pilot project a restaurant on every highway was thought of because of the higher traffic. At any given time this restaurant can hold up to 160 people which include 3 buses, 5 cars and 20 locals.

The restaurant would resonate calmness, serenity, authenticity and would be experiential for the people coming in and so I was inspired from the Andhra architecture and planned on incorporating parts of it in my design planning. The restaurant is designed in a modular format that can be added, subtracted or moved in a linear format as pleased by the owner at the time of construction.

There are two zones in the restaurant; the fast paced moving areas and the experiential areas. The floor and integrated mud seating are in the experiential zones whereas the normal seating has been provided in the fast paced moving area. The restaurant covers an area of 437.92 meter square which is the biggest model any owner can hold, and for a space so big service areas are provided for the waiters where food can be stacked up before the rush hours.

The walls of the restaurant are covered with mud plastering. Kadappa and Yellow Shahabad are the two stones that are used for the flooring in the fast paced zone whereas red oxide in the experiential zones. The furniture is made of a durable local wood called Aiswal another option being Aini.

The lighting used in the entire restaurant will be the LED lighting whereas the waiting lounge will have lighting based more on the aesthetic purposes where the utensils that are used in Andhra’s cooking could actually become a part of their lighting technique.

The restaurant is based in a place which is very hot and humid most of the time and so sustainable systems like earth air tunnels, wind catchers, incorporating courtyards, rat trap bonds, using materials like mud plastering and stones like Kadappa and Shahabad will cool down the place to a great extent thus making the customer comfortable to enter and have a good time at the restaurant.
